palate, its colour, a joy for the eyes, accompanies all
the recipes of the Umbrian, giving them nobility. 
The
experience gets deeper and finds so many new inviting arguments
when you add to these flavours the great wines of the region,
should they be red or white wines, famous and refined. A
microcosm, at the end, of flavours and stories, a simple
table having the sense of the measure and of the equilibrium,
a necessary passage, so joyful on the way to the heart of
